1 Chicken Breast
1 Cup Brown Rice
1/2 Green Bell Pepper
5 Cherry Tomatoes
Grill or Char-Broil Chicken
Grill or char-broil chicken for 10 minutes on each side on medium heat. Cook until internal temperature is 165 degrees fahrenheit or 75 degrees celsius.
Bring water to a boil. Once water is boiling, add brown rice, cover, and reduce to simmer. Simmer for 45 minutes, without opening pot. After 45 minutes, turn off heat and let sit for 15 minutes. DO NOT OPEN POT UNTIL 15 MINUTES ARE OVER. Open pot and fluff the rice. These cooking instructions may vary. Please check the packaging instructions on your brown rice package.
Green Bell Peppers
Cut the bell pepper into strips. Cook the green bell peppers, uncovered in boiling water for about 5 minutes; invert to drain well. Boil for 2 minutes if you plan on reheating your prepared meal.
Cut the 5 tomato cherries in half and spread them over the brown rice and bell peppers.
