Turkey Stuffed Acorn Squash

INGREDIENTS

1 Acorn Squash

6 Strips of Uncured Sugar-Free Bacon

1 Cup of Shredded Brussel Sprouts

2 tbs Coconut Oil

R

1 Medium Onion, Chopped

R

1 1/2 lbs Lean Ground Turkey

R

1 Small White Onion

R

INSTRUCTIONS

Pre-heat oven to 250°F

• Cut in half and de-seed acorn squash, reserve the seeds
• Spray seeds with coconut oil and sprinkle with Tennessee whiskey, bake for about 20 minutes or until dry and crunchy – set aside
• Increase the oven temperature to 400F
• Spray coconut oil on squash and bake for about 35-45 minutes or until tender, while that is cooking;
• Place bacon on a baking pan and bake for about 15 minutes turning over once, reserve the bacon fat and set bacon aside
• In the same baking sheet add Brussels sprouts and sprinkle generously with Asiago Jalapeño, place in the oven and bake for 20 minutes – set aside
• In a skillet add coconut oil and chopped onions, cook until soft, about 3 minutes
• Add ground turkey, sprinkle with Texas Fusion, cover and let cook for about 10 minutes, stir breaking down the chunks of turkey and cook for another 5-10 minutes
• Place the acorn on a plate, add turkey
meat, top with Brussels sprouts and bacon and finish it off with the acorn squash seeds.
• Enjoy the spicy and smokey flavors of this healthy but delicious meal!
